I have since had a boat builder in, and he said the exactly the same thing you did. He also gave me a quote on the repair, which unfortunately has to have a good deal of transportation cost on top, so I am still considering doing this job myself.
One difference I think, based on your description, is the hull liner above the waterline. On the Mark V, it appears to be rigid fiberglass right up to the bulkhead. I can't think of any way to cut the piece out, or tab the new piece in without cutting out a portion of the hull liner on either side. Were you able to access the tabbing without cutting away any liner?

Hi there, I'm new to posting in the forum, although have been scouring over the last year.
I have a soft spot on the lower bulkhead on the main side, also, the fiberglass has begun to separate from it at about the midway point. The boat sat for some time and water collected at the bottom I believe. The rest of the wood seems quite solid especially up near the chainplate.
My question is, basically, how is this put together?
The hull liner goes tight up against it on the bottom and to at both sides (main cabin and head). Does it sit in a groove in the liner? Or is it tabbed to the hull all the way around?
Are the head and main cabin liner are two separate pieces?
Has anyone ever tried to replace one? How did you go about it?
